Soup is an amazing food for getting in lots of veges and herbs, it's also great to make in bulk to freeze for quick midweek dinners, or eaten as leftovers for lunch - it always seems to taste even better the next day!!

The recipe calls for Parmesan but its great without for a fully plant based meal
