These are a super yum version with a healthy twist - they're made with chickpeas đ
đȘYou'd never know it though, I've served these up at birthday parties, afternoon tea, playdates...and they always get gobbled up!!
đȘPacked full of plant based protein, low in sugar, and vegan - the perfect treat. They're also gluten free and nut free.
đȘChickpeas are a super food - they are high in fibre, iron, protein, and many other nutrients (selenium, potassium, magnesium, b vitamins, choline, and luteolin to name a few)
đȘThey've been shown in various studies to reduce inflammation, reduce cholesterol, improve blood sugar control, help with weight management, improve brain health /mood, improve gut health, and improve heart health as well as helping reduce cancer risk
đȘThis is one of the school lunch baking recipes we make over and over, it's a great way to get legumes and fibre into little tummies, plus the low GI high protein recipe keeps energy levels up and avoids those sugar crashes
đȘRecipe as follows :
1 can chickpeas, drained
1/4 cup dessicated coconut
1/4 cup rolled Oats (not jumbo)
1/3 cup coconut sugar
3 Tbsp melted coconut oil
1 Tbsp vanilla
1/2 tsp salt
1/2tsp baking soda
1 tsp apple cider vinegar
2 Tbsp chia seeds (can omit these if needed)
1/2 cup dark choc chips (at least 55% cocoa)
Preheat oven to 175deg centigrade
Process chickpeas, coconut oil and vanilla in a food processor or blender until smooth
Add in rest of ingredients apart from choc chips, and process till well mixed
Add choc chips and pulse briefly until mixed through
Spoon out onto baking tray and flatten slightly with a fork
Bake for 18-20min until edges begin are dry and small cracks form on top
đȘCool, then enjoy!
These last up to a week in a sealed container (ideally in the fridge as they don't dry out)
